Fried Wild Rabbit

3 rabbits, quartered
3cups milk
2T. salt
1 tsp. pepper
1 paprika
1cup flour
1/4 cup white cooking wine
1/8 cup butter

Refigrate rabbit overnight in milk and salt solution. Pat dry. Sprinkle with pepper and paprika. Roll in flour. Fry in oil until brown, approximately 20 minutes. Pour off drippings. Add wine and butter to skillet. Cover tightly and simmer for 15 minutes.

Serves:6 Prep Time:45 minutes.
